Food and Culture: Britain's Influence on Colonial Cuisine

The first British settlers owed their survival to Amerindians and when a constant supply of labor was needed, first came the enslaved Africans, later the indentured Portuguese and Chinese and finally the Indians. They brought with them their traditional foodstuffs, style of preparation and cooking techniques. In some instances dishes have been preserved untouched, but often new ones have developed aruond the variety of the islands' produce or the intertwining culinary standards.
